Maple Glazed Salmon

Marinade:

 -          ¼         Cup                 Maple Syrup

1          -           Tbs                  Lemon Juice

2          -           Tbs                  Light Soy Sauce

1          -           tsp                   Dijon Mustard

-           1/2       tsp                   Minced Ginger Root

1          1/4       lb                     Salmon Filet

2          -           tbs                   Scallions (thinly sliced)

 

    • Mix all ingredients except salmon and scallions
    • Cut Salmon into 4 serving pieces and place in a shallow dish.
    • Drizzle marinade over fish, reserving about ¼ cub marinade to serve over cookewd fish.
    • Regrigerate fish for about 30 minutes.
    • Heat oven to 400o
    • Place fish in baking dish.
    • Set aside marinade
    • Bake 15-20 minutes, basting occasionally with marinade, until fish flakes easily with fork.
    • To serve: drizzle reserved ¼ cup reserved marinade, over fish.
    • Top with scallions.

    Temperature:  400º
    Time:              15-20 minutes
